Bonus Post: Mind-blowing Roasted Cauliflower
If you know me you know that I try to eat healthy and I love doing right by vegetables and cooking them in a way that brings out their best possible flavor.
Today's breakfast (yes - this is breakfast at times for me) was a hard-boiled egg, a glass of iskiate and half a head of roasted cauliflower (not all together tho).
Take your head of cauliflower and wash it and break it (and/or cut it) into pieces - toss into a bowl with tight fitting lid (or a zip lock) with a table-spool of extra virgin olive oil, and a shake or three of lowry's season salt, black pepper, and a shake or two of hot chili powder. Put your lid on the bowl and shake it! Pour it into a brownie-pan or some such and roast at 350 for 25 minutes or until tender. DELICIOUS!! There are dozens of ways to change this up - with apple slices & walnuts, peppers and bay-leaf, capers, or fusion-style - with taco seasoning mixed with curry - sooooo tasty ... or ... well - why don't you let me know what you come up with!
